Soba is appreciating a renaissance in Japan now. Here are two examples of handmade soba noodles made from buckwheat. These noodles are cooked al dente and have an earthy taste and woodsy aroma. The top is served with a hot bowl of soup that contains slices of duck breast and leeks. Tempura vegetables served with a tsuyu dipping broth and grated daikon radish with cold noodles topped with nori. The soba is dipped into the darker broth in front with some wasabi and green onions.
