Homemade Ponzu ポン酢の作り方

This recipe comes from 2002 Iron Chef Winner, Kimio Nonaga. He mixes simply ponzu (yuzu citrus juice), soy sauce and hon-mirin to taste. Usually:

1 part citrus juice
1 part soy sauce
1 part hon-mirin

And then adjust as you like.

It is quick, easy, no need to cook it, just blend. We keep it in the fridge to use both for ponzu or to brighten up a salad as a non-oil dressing. If you miss the mouthfeel of the oil, then add some EVOO.
